This is a favorite in our home! It’s a nice treat and still mostly healthy. Adjustments could be made to make it even more so!
½ cup water
½ cup raw honey
1.5 tsp cinnamon
2 Tbs butter
While that slowly melts combine:
1 Cup medium warm water (115-120 degrees)
3 Tbs raw honey
1 Tbs yeast
Mix together and allow to proof for 10-15 minutes until very bubbly.
Pour water/honey/cinnamon/butter mixture into the bottom of a 9×13 baking dish. *Optional: sprinkle a layer or nuts or raisins over this.
Melt ¼ cup of butter.
3 Tbs olive oil
1 tsp sea salt
1 small egg
Mix then add:
3-5 cups of flour until dough handles well. I use spelt flour so it usually takes 5 cups.
Shape dough into a ‘log’ of sorts then begin to press it flat on a lightly floured surface. Roll out until it is ½-1/4 inch thick. Brush or spread melted butter over the rolled out dough well.
Pre-heat oven to 350.
Sprinkle liberally with cinnamon, sucanat, and brown sugar. Do as little or as much as you like depending on taste.
Roll your dough up and cut into 1 inch slices. This will rise well. Place in the baking dish on top of the water/honey/cinnamon/butter mixture. Leave room between them to expand and raise.
Let rise on the counter for 5-10 minutes then place in heated oven for 30 minutes.
