Avocado Blender Brownies

I’m not in the avocado fan club…

🥑I don’t crave them.

🥑I don’t like the texture.

🥑It’s not the part of a salad I look forward to…

But, they’re good for me, right? So I eat them… Here and there. I do enjoy cooking with avocado oil but that’s beside the point.

My children don’t know my dislike of them, thankfully and eat them very well! Today I have 2 that are perfectly ripe but will likely go bad before they get consumed. In a frugal attempt to throw nothing away, I decided to try some avocado baking.

I’ve seen the recipes floating around but have never been brave enough to give it a go. So I took the first simple recipe I found, made it healthier by changing the sweetener and swapping a couple other ingredients. Here’s what I came up with!

Preheat oven to 350°F.

In a blender or food processor (Love my Ninja, but there are several options, so ask before you buy. We went through 3 to get the right one), blend together:

1 avocado
on plan sweetener, I chose 24 Truvia packets, and 1/2 Cup zero percent Greek yogurt.

Blend until smooth and creamy!

Add: 3eggs, 1/2 Cup coconut flour, 1/2 Cup cocoa powder, sprinkle of mineral salt, 1tsp aluminum free baking soda.

Blend again until well combined. Transfer to a greased 9×9 baking pan. I like to use coconut oil cooking spray. But I just got some avocado🥑 oil cooking spray… So I’ll have to tell you what I think.

Bake 30-40 minutes or until a toothpick comes out mostly clean. LET COOL! Otherwise it isn’t set up and it’s wiggly and weird. Trust me ;). I was impatient!

My 5 year old’s review is: “This is really good, mom! Thank you thank you thank you! Can I have more? My tummy is rumbly…”

Ingredients

1 Avocado
24 Turvia Packets or favorite on plan sweetener
1/2 Cup Zero Percent Greek Yogurt
3 Eggs
1/2 Cup Coconut Flour
1/2 Cup Cocoa Powder
Sprinkle of Mineral Salt
1 tsp Aluminum Free Baking Soda

    1. Pre-heat oven to 350°F.
    2. In Blender or Food Processor, blend together until smooth: Avocado, Sweetener, and Yogurt.
    3. Add remaining ingredients: Eggs, Coconut Flour, Cocoa Powder, Mineral Salt, and Baking Soda.  Blend until smooth and well incorporated.
    4. Spray 9×9 baking pan.
    5. Pour batter into pan and smooth the top.
    6. Bake 30-40 minutes or until a toothpick comes out mostly clean.
    7. Allow to COOL!  No weird wiggles ;).
